A fast, crunchy okra side made in the air fryer with a light arrowroot coating and warm spices. Drying the okra thoroughly and cooking at 400°F ensure a golden, non-slimy finish in about 12 minutes. Perfect as a snack or side with Southern-inspired meals.

Equipment

  • Air fryer
  • Large mixing bowl
  • Paper towels
  • Sharp knife
  • Tongs

Ingredients

  • 1 pound fresh okra cleaned, dried thoroughly, sliced lengthwise
  • 2 tablespoons avocado oil high smoke point
  • 2 to 3 tablespoons arrowroot starch cornstarch or potato starch work as substitutes
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon chili powder

Instructions

  • Wash okra pods under cold water and pat completely dry with paper towels to prevent slime.
  • Slice each okra pod lengthwise, keeping pieces similar in size for even cooking.
  • Add okra to a large mixing bowl, drizzle with avocado oil, and toss to coat evenly.
  • In a separate small bowl, mix arrowroot starch, salt, cumin, garlic powder, coriander, turmeric, and chili powder until well combined.
  • Sprinkle the spice mixture over the oiled okra and toss gently until every piece has a light, even coating.
  • Preheat the air fryer to 400°F for 3 minutes.
  • Arrange okra in a single layer in the air fryer basket, avoiding overlap.
  • Air fry at 400°F for 12 minutes total.
  • Shake the basket at the 6-minute mark to promote even browning; use tongs if needed to rearrange.
  • Check for golden brown edges at 12 minutes; add up to 2 more minutes if needed based on your air fryer.

Notes

  • Dry okra very well before coating to avoid sliminess.
  • Cook in a single layer and shake halfway for even crisping.
  • Cornmeal variation: swap arrowroot for cornmeal and add about 2 minutes cook time.
  • Extra-crunch option: use half panko and half arrowroot; may need 2 additional minutes.
  • Buttermilk variation: soak sliced okra 10 minutes in buttermilk before coating for tang and better adhesion.
  • Reheat at 375°F in the air fryer for 3–4 minutes; avoid microwaving.
  • Storage: best fresh; refrigerate up to 2 days in an airtight container. Not recommended to freeze.
  • Serving ideas: pair with grilled chicken, black-eyed peas, or dip in remoulade, ranch, or yogurt-based sauces.
