This Air Fryer Steak Bites Marinade is the fast way to get tender, juicy steak with caramelized edges in about 15 minutes. Whisk a simple soy-based marinade, coat sirloin cubes, then air fry at 400°F for a glossy, savory finish that beats takeout on a weeknight.
- 2 pounds sirloin steak cut into 1 1/2-inch by 1-inch pieces
- 2 tablespoons oil
- 1.5 teaspoons salt
- 1.5 teaspoons ground black pepper
- 1.5 teaspoons soy sauce low-sodium works too
Cut the sirloin steak into even 1 1/2-inch by 1-inch pieces so they cook at the same rate.
In a bowl, whisk together the oil, salt, black pepper, and soy sauce until combined and glossy.
Add the steak cubes and toss until every piece is well coated in the marinade.
Preheat your air fryer to 400°F (this helps browning start immediately).
Arrange steak in a single layer in the basket (cook in batches if needed). Air fry at 400°F for 7 minutes for rare to medium-rare, or up to 12 minutes for medium-well. Shake the basket around the halfway point so new sides hit the hot air.
Serve right away while the edges are browned and the centers are still juicy. You should see caramelized spots and a light glossy coating on the outside.
- Storage: Cool, then refrigerate in an airtight container for up to 3 days.
- Reheat (best texture): Air fry at 350°F for 2 to 4 minutes, shaking once, just until warmed through.
- Air fryer size notes: In a 5 to 6-quart basket air fryer, you can usually do this in 1 batch if you keep a single layer. In a 3.5-quart, plan on 2 batches. Oven-style air fryers may need 1 to 2 extra minutes for the same browning.
- Batch cooking tip: If you’re doubling, keep the first batch warm on a plate, then re-crisp everything together for 1 minute at 400°F right before serving.
- Troubleshooting:
- Gray, steamed steak: You overcrowded the basket. Cook in a single layer with space.
- Dry steak: Your cubes were too small or you cooked too long. Stick to the cut size and start checking at 7 to 8 minutes.
- Uneven browning: Shake at the halfway point and cut pieces evenly.
