Mixing bowl
- 1 3/4 cups self-rising flour
- 1 cup plain Greek yogurt
- 1/2 cup prepared pizza sauce jarred marinara works
- 1 cup shredded mozzarella cheese
Mix self-rising flour and Greek yogurt in a mixing bowl until a dough forms; knead 2–3 minutes until smooth.
Roll dough on a lightly floured surface to about 1/4-inch thickness.
Cut into 16 equal squares (about 2x2 inches) using a pizza cutter.
Place about 1 teaspoon pizza sauce in the center of each square; avoid overfilling.
Add about 1 tablespoon shredded mozzarella on top of the sauce.
Fold all four corners toward the center and pinch edges tightly to seal completely.
Line the air fryer basket with parchment rounds and arrange rolls in a single layer with space between pieces.
Air fry at 380°F for 8 minutes, shaking the basket gently at the 4-minute mark to promote even browning.
Cook until edges are golden brown and cheese inside is melted and bubbling; add 1–2 minutes if needed.
- For best crisping, preheat the air fryer for 3 minutes and cook in a single layer; do not stack.
- Seal edges tightly and avoid overfilling to prevent bursting and leaking cheese.
- Variations: add mini pepperoni and red pepper flakes (spicy), finely diced peppers/onion/sausage (supreme), or scrambled eggs, bacon, and cheddar (breakfast).
- Reheating: 350°F for 4 minutes from fridge or 6 minutes from frozen; add a light oil spray to restore crunch.
- Storage: 2 hours at room temp, 3 days refrigerated (single layer), up to 2 months frozen (wrap individually, then bag).
- Serve with marinara, ranch, or garlic butter for dipping; pair with salad or veggie sticks.
- If using frozen store-bought pizza rolls, cook at 380°F for about 10 minutes, shaking halfway.
