This Air Fryer Bacon Egg And Cheese Sandwich is a fast, hot breakfast with crispy bacon, a set egg, and melty cheddar. The air fryer does the bacon and the final warm melt so you get a handheld sandwich with minimal mess.

Ingredients

  • 3 to 4 thick-cut bacon slices uncured turkey bacon or plant-based bacon also works
  • 2 slices bread white, wheat, or brioche
  • 2 large eggs
  • 2 to 4 cheddar cheese slices use more if you like it extra melty
  • 1 tablespoon butter or mayonnaise, for toasting the bread
  • 1 teaspoon mayonnaise optional, as a sandwich condiment

Instructions

  • Preheat your air fryer to 350 to 375°F. Lay 3 to 4 bacon slices in a single layer in the basket (no overlap if you can help it).
  • Air fry the bacon for 3 to 6 minutes at 350 to 375°F, until it’s as crisp as you like. Transfer to a plate and blot lightly if there’s excess grease.
  • While the bacon cooks, fry 2 eggs in a skillet, seasoning lightly if you want. Keep the eggs roughly the size of your bread (fold if needed). Flip once so both sides are set.
  • Spread 1 tablespoon butter (or mayo) on one side of each bread slice. If using mayo as a condiment inside the sandwich, spread up to 1 teaspoon on the inside of one slice.
  • Assemble: place 1 slice of bread down, add 1 slice cheddar, add the eggs, then another slice cheddar. Add the bacon, then add remaining cheddar (if using), and top with the second bread slice.
  • Place the assembled sandwich back in the air fryer and cook for 1 to 2 minutes at 350 to 375°F, just until the cheese is melted and the sandwich is hot and lightly crisped.
  • Remove, slice if you want, and eat right away while the cheese is gooey and the bacon stays crisp.

Notes

  • Storage: Best fresh. If you need to prep ahead, store cooked bacon and cooked eggs separately in airtight containers for up to 3 days, then assemble with cheese when reheating.
  • Reheat (best texture): Air fry at 350°F for 3 to 5 minutes until hot and the bread edges crisp. If reheating from cold and fully assembled, start at 3 minutes and add 1 minute as needed.
  • Air fryer size and type: In a 3.5 quart basket, cook bacon in 2 quick rounds if it overlaps. In oven-style air fryers, bacon may need 1 to 2 extra minutes to crisp.
  • Troubleshooting:
    • Bacon stayed floppy: You likely overlapped strips. Cook in a single layer, or add 1 to 2 minutes.
    • Bread dried out: Your final warm-up went too long. Keep the assembled sandwich to 1 to 2 minutes in the air fryer.
    • Cheese didn’t melt: Add 30 to 60 seconds, or use thinner slices so it melts faster.
